I don’t normally blog about food but I’m pretty happy with how this chicken turned out. A merge of tex-mex and chinese elements. Ever since we got the crockpot, all I’ve done is cook meat in it. It’s a little bit of quick fun coming up with the cocktail for the sauce / marinade. The clean-up: long and tedious.
There’s sort of a base I’ve concocted with a couple of variant ingredients. This time it was mandarin oranges and cranberry sauce. To finish it out, I made some cilantro-lime rice with black beans.
